What is umami flavour in vegan cooking?
Umami flavour in vegan cooking: how to achieve it and which plant-based ingredients provide it to create more intense and flavourful dishes
When talking about flavours, four are usually mentioned: sweet, salty, sour and bitter. However, there is a fifth flavour that is playing an increasingly prominent role in gastronomy: the umami flavour.
At Shlen we like to explain the importance of this flavour in plant-based cooking, as umami allows us to create dishes with greater intensity and depth using entirely plant-based ingredients. Thanks to certain foods and culinary combinations, it is possible to create very tasty recipes without the need for animal products.
What is the umami flavour?
Umami is known as the fifth basic taste, alongside sweet, salty, sour and bitter.
The word comes from Japanese and means something like “savoury” or “delicious”. It was identified in the early 20th century by the Japanese scientist Kikunae Ikeda, who discovered that some foods contain natural compounds that produce this sensation on the palate.
The main component responsible for this flavour is glutamate, an amino acid found naturally in many foods.
Ingredients that provide umami flavour in vegan cooking
Many plant-based ingredients contain compounds that produce that deep, savoury flavour characteristic of umami.
Some of the best known are:
- mushrooms
- ripe tomatoes or sun-dried tomatoes
- miso
- soy sauce or tamari
- seaweed
- nutritional yeast
- fermented foods
These ingredients are frequently used in vegan cooking to enhance the flavour of dishes and create more well-rounded combinations.
Why umami is key in plant-based cooking
Umami helps dishes achieve greater intensity and balance of flavours.
In vegan cooking, combining ingredients rich in umami allows you to create more interesting and satisfying recipes. For example, mixing mushrooms with soy sauce or using tomato purée can add a very distinctive depth of flavour.
Thanks to these combinations, plant-based cuisine proves that it can be varied, creative and full of nuance.
